Crispy Christmas Biscuits!!!!!

Hello my beloved friends!!!!

I finally managed yesterday to cook a few of my favorite biscuits for Christmas and not only of course! Delicious, crispy and full of aroma biscuits that my daughter loves and my hubby eat a lot...and my friends...and my family... and so many others!

Actually is a really easy recipe to follow and with your imagination you can create masterpieces!







What will we need:
1 tea cup butter
3/4 tea cup of white sugar
1 big egg
3 tea cups flour
1 sugar spoon baking powder

1/2 sugar spoon salt
1 sugar spoon vanilla or 
orange icing (or whatever aroma you like)




Procedure:

In a bowl mix the butter and the sugar. Add the egg.

When the mixture is ready add the salt and the orange icing (or vanilla).

Put the baking powder in the flour and mix it and then add is slowly in the above mixture.

When the pastry is ready, put it in a bowl, cover it with membrane for cooking and leave it in the refrigerator for an hour to rest.




After an hour, you can create your biscuits by using cookie cutter in your beloved schema. 

Serve them with fine flour sugar or create a icing or even taste them without anything! They will be yummy in every way!

Cupcakes full of Orange!!!!

Hello my friends!!!

I think I am in love with cupcakes! To be honest I've always enjoyed them but I thought they were really hard to bake. But when almost every week I see a delicious recipe and amazing photos in my friend's Natasa's blog, then it is really hard to not try them. So because of my princess birthday I tried to cook a couple of different recipes and I was really surprised when I realized that it was easy to make them and easier to eat them…. Yeap… none left!

So my first attempt to cook a orange filled cupcake is here!







What will you need:

For the Cupcakes
1/2 cup butter
2/3 cup white sugar
3 eggs
1 dash of salt 
50 ml fresh milk
1/2 teaspoon orange icing 
1 1/2 cups all purpose flour
1 1/2 teaspoons baking powder
80-100gr dried fruits
For the orange icing
180gr cheese cream
140gr fine flour sugar
1 teaspoon orange shaving






The procedure is the usual… in a bowl mix the butter and the sugar and add the eggs one by one until the mix becomes homogeneous.

Add the milk, the orange shavings and keep mixing.

In another small bowl mingle the flour, the baking powder and the salt and add it in the above mixture.

Stop using the mixer, add the dried fruits and keep mixing it for a while with scoop. Your mix is ready. Cook it in a preheat oven in 170 degrees C for about 20min.

When the cupcakes are ready, just mix in a bowl the ingredients for the icing and leave it in the refrigerator for about 15min.  Υou are ready to  décor your small, delicious cakes.

Delicious Coconut Cake!!!

Hello my friends!

It is really great especially this time of the year ( I mean with the rain and the cloudy weather) to enjoy a cup of hot coffee with a piece of cake! Imagine now this cake to have Coconut!!! I just love Coconut and especially its aroma.

And it is even better if you can taste this cake from a good friend that cooks really amazing!!! So another guest post from my good friend Loula from Loulalalou

Hello my friends..

I would love to share with you a really easy to make cake with coconut that you are going to love. This cake is my favorite since is my mother's recipe and reminds me my childhood. So let's start...







Ingredients:
1 1/2 cup sugar
2/3 cup butter
3 eggs
1 teaspoon baking powder
2 cups flour with baking powder 
1 cup chopped/powdered coconut

Υλικά
1 1/2 φλ. ζάχαρη
2/3 φλ. βούτυρο/μαργαρίνη
3 αυγά
1/2 φλ. γάλα
1 κουτ.γλυκού baking powder
2 φλ. αλεύρι που φουσκώνει μόνο του
1 φλ. καρύδα




Procedure
Preheat oven to 170 C.
Put all the ingredients in the mixer bowl and mix them together for 4 minutes.
Put the mixture into a buttered and floured cake tin and bake it for about 1 hour.
Let it to cool and sprinkle with sugar powder.


Εκτέλεση
Προθερμαινουμε το φουρνο στους 170C. 
Βαζουμε όλα τα υλίκα σε ένα μπωλ και τα ανακατευουμε για 4 λεπτα.
Τοποθετούμε το μείγμα σε ενα ταψι που το εχουμε βουτυρώσει και αλευρώσει και το ψήνουμα για 1 ωρα. 
Αφηνουμε να κρυώσει και πασπαλίζουμε με αχνη ζαχαρη.

Easy right? and delicious too.... buon appetite!

Chocolate Rocks!!!

An amazing, delicious dessert that can be cooked in a few minutes!




Materials:
   3 bars of dark chocolate
-      Shavings from 1 orange
-      4-5 soup spoon milk
-      Almost 250gr Almonds
-      100-150gr raisins






What to do:

First of all parch the almonds.

Use  a benmarie to melt the chocolate. Add the milk and the shavings from the orange and keep mixing the compound.

When the mixture is ready, add the almonds and the currants and mix it for a couple of minutes again.

Your dessert is ready… just use a spoon and put a spionfull on the large baking pan that is covered with cooking paper.

Leave them for a few hours to chill and you are ready to taste them!!!!





To be honest the classical recipe for the above dessert is just chocolate, almonds and butter. But I wanted to cook it especially for my daughter so instead of butter I added milk and of course raisins and orange. Just use your imagination and create small but sweet bites by adding more nuts and dried fruits or instead of orange just use a few drops of your favorite liqueur.

Lemon Yoghurt Dessert

Hello my friends!!!

It was about time to be back In my blog, but to be honest I will not be really active as I was before due to real life issues. I will try to update it with new interested (as always) posts, but not as often as before. Hopefully in a month I will be back “in business”!

So today I would like to share with you a delicious recipe, really fast to make it and really easy. What will you need? Only four materials and 10min of your time. And I promise the result is really yummy and perfect for those who love to eat something refreshing during Summer or people who do not love chocolate or to sweat desserts!




So… what will you need:
-     - 1kgr yoghurt  (I prefer drained yoghurt)
-     - 2 lemons ( juice from 2 lemons and shavings from 1 lemon)
-     - 1 box of biscuits ( I like Digestive)
-     - 1 box of condensed milk




In a small baking pan or a bowl  crumble the biscuits.

In a bowl add the condensed milk and mix it with the lemon juice and the lemon shavings.

Add the crème above your biscuits and put the bowl/pan into the refrigerator for almost 30min.




Your dessert is ready to enjoy it!!!! If you wish it to be more intense, just use more lemon!

April's Recipe : Semolina halvah!!!! - Χαλβάς από Σιμιγδάλι!!!!


Ένας χαλβάς όλο γλύκα! Εύκολο, νόστιμο, νηστίσιμο γλυκό που σίγουρα θα σας κόψει κάθε ανάγκη για ζάχαρη. Γευτείτε τον με τον καφέ σας ή το ρόφημα σας, σερβιρισμένο με μπόλικη κανέλα!

This is a recipe for a delicious halvah! An easy to make, tasteful and lent friendly dessert that will satisfy your need for sugar. Take it with your coffee or drink, served with lots of cinnamon!!! 




Υλικά
1 φλιτζάνι ελαιόλαδο
Δυο φλιτζάνια λεπτό σιμιγδάλι

Materials 
1 cup of olive oil
2 cups of fine semolina


Υλικά για το Σιρόπι
Τρία  φλιτζάνια λευκή ζάχαρη
Πέντε φλιτζάνια νερο
1
ξύλο κανέλας
1
μικρό πορτοκάλι (cut one slice and take the rest’s juice)

Syrup materials
3 cups of white grain sugar
5 cups of water
1 cinnamon stick
a small orange




Εκτέλεση
 Για το γλυκό αυτό θα χρειαστούμε δυο κατσαρόλες, στη μία να ετοιμάσουμε το σιρόπι και στην άλλη να ψήσουμε το σιμιγδάλι. Ας ξεκινήσουμε λοιπόν…
Στη μία κατσαρόλα βάλτε το ελαιόλαδο και προσθέστε το λεπτό σιμιγδάλι. Ανακατεύετε συχνά για να μην καεί, σε μέτρια φωτιά.  Είναι έτοιμο όταν χάσει το έντονο κίτρινο χρώμα του και αρχίσει να αποκτάει μία χρυσοκαφε απόχρωση!

Preparation
For this dessert you are going to need two pans, one for the syrup and one for the semolina. Let’s begin…

Put the olive oil in one pan and add the fine semolina. In a medium temperature you have to stir continuously to avoid getting the semolina burned. It’s ready as soon as it looses its yellowish color and take a golden - brown color.




Στη δεύτερη κατσαρόλα προσθέστε το νερό, τη ζάχαρη, το ξύλο κανέλας, το χυμό του πορτοκαλιού και μία ροδέλα πορτοκαλιού και ανακατεύετε μέχρι να γίνει ένα ομοιόμορφο σιρόπι. Μόλις βράσει το αφήνεται ελάχιστα και είναι έτοιμο.

Put the water in the second pan and add the sugar, the cinnamon stick, the orange juice and an orange slice. Stir until you have a smooth syrup. As soon as it boils you leave it for some seconds and its done!


Αφαιρέστε το πορτοκάλι και την κανέλα και ρίξτε το σιρόπι στο σιμιγδάλι. Ανακατεύετε συνεχώς μέχρι να απορροφηθεί. Προσοχή μην σας πιτσιλήσει και καείτε.

You remove the orange slice and the cinnamon stick and add the syrup to the semolina. Be extra careful to avoid being burned. The oil inside the semolina doesn’t react in a friendly way with the syrup’s water!


Ρίχνετε το  μίγμα σε ένα ταψάκι ή πυρέξ και προσθέτετε κανέλα τριμμένη. Το αφήνετε να κρυώσει καμία ώρα και είναι έτοιμο για σερβίρισμα!

Put the mixture in a baking pan or a pyrex and add cinnamon powder. Let it cool for about an hour and it’s ready to be served!



  
Τιπς
- Στο σιρόπι μπορείτε να προσθέσετε και ένα αστεροειδή γλυκάνισο για περισσότερο άρωμα. Μην ξεχάσετε να τον αφαιρέσετε πριν βάλετε το σιρόπι στο σιμιγδάλι.
- Μπορείτε όταν προσθέσετε το σιρόπι να βάλετε στο μίγμα και αμύγδαλο καθαρισμένο ή καρύδι ή σταφίδες. Ότι τραβάει η όρεξή σας.

Tips
- You may want to add an aniseed in the syrup for more flavour  Don’t forget to remove it before you add the syrup to the semolina.
- You also may add raisins and almonds or nuts in the mixture! Whatever your heart desire!

March Recipe : Choco-delirium !!!!

A quick and easy recipe to satisfy your desire for chocolate! Made with simple ingredients that usually are not missing from the cupboard, this recipe will satisfy the demands of the most fervent chocoholics!

Μία συνταγή εύκολη και γρήγορη για να ικανοποιήσετε απόλυτα τις σοκολατένιες ανησυχίες σας! Φτιαγμένη με απλά υλικά που συνήθως δε λείπουν από το ντουλάπι, ικανή να πείσει και τους πιο απαιτητικούς λάτρεις της σοκολάτας!







MATERIALS:


240gr (0.53lb) Dark chocolate or milk chocolate for desserts
220gr (0.48 lb) butter
6 eggs
300gr (0.66 lb) white sugar
220gr (0.48 lb) sifted flour
30gr (0.066lb) sifted cocoa
A few drops of vanilla flavor (alternatively you can use orange zest or peel or another flavor of your choice)



ΥΛΙΚΑ:


240γραμ. κουβερτούρα γάλακτος ή κανονική
220 γραμ. βούτυρο
6 αυγά
300γραμ. λευκή ζάχαρη
220 γραμ. κοσκινισμένο αλεύρι
30 γραμ. κακάο κοσκινισμένο
Λίγες σταγόνες άρωμα βανίλιας (εναλλακτικά μπορείτε να αρωματίσετε με ξύσμα πορτοκαλιού ή οποιοδήποτε άρωμα της αρεσκείας σας )


 



PREPARATION


Melt in double boiler the butter with the chopped chocolate. Stir well until the mixture is melted.


At the same time, beat eggs and sugar with an electric mixer on high speed for about 7-8 minutes or until mixture has thickened and turned a very pale yellow.


Add the mixture with the butter and chocolate into the second one and keep beating. Add the remaining ingredients and mix well.


Pour the mixture into a Pyrex or a cake hoop Previously, you have to coated with cold butter and sprinkle it with flour. Bake it for 25 minutes in a well preheated oven at 200oC and ready!






 
ΕΚΤΕΛΕΣΗ


Λιώνουμε σε μπεν μαρί το βούτυρο με την κουβερτούρα. Ανακατεύουμε καλά μέχρι να γίνει το μείγμα μας ομοιόμορφο.


Παράλληλα, χτυπάμε στο μίξερ σε δυνατή ταχύτητα τα αυγά με τη ζάχαρη μέχρι να ασπρίσουν.


Προσθέτουμε το μείγμα της κουβερτούρας στο μείγμα των αυγών, συνεχίζοντας το χτύπημα. Προσθέτουμε τα υπόλοιπα υλικά και ανακατεύουμε μέχρι να ενσωματωθούν πλήρως και τα τελευταία μας υλικά.


Αδειάζουμε το μείγμα μας σε πυρέξ ή τσέρκι με βάση, το οποίο έχουμε προηγουμένως βουτυρώσει και αλευρώσει. Ψήνουμε για 25 λεπτά σε καλά προθερμασμένο φούρνο στους 200οC.
