Crispy Christmas Biscuits!!!!!

Hello my beloved friends!!!!

I finally managed yesterday to cook a few of my favorite biscuits for Christmas and not only of course! Delicious, crispy and full of aroma biscuits that my daughter loves and my hubby eat a lot...and my friends...and my family... and so many others!

Actually is a really easy recipe to follow and with your imagination you can create masterpieces!







What will we need:
1 tea cup butter
3/4 tea cup of white sugar
1 big egg
3 tea cups flour
1 sugar spoon baking powder

1/2 sugar spoon salt
1 sugar spoon vanilla or 
orange icing (or whatever aroma you like)




Procedure:

In a bowl mix the butter and the sugar. Add the egg.

When the mixture is ready add the salt and the orange icing (or vanilla).

Put the baking powder in the flour and mix it and then add is slowly in the above mixture.

When the pastry is ready, put it in a bowl, cover it with membrane for cooking and leave it in the refrigerator for an hour to rest.




After an hour, you can create your biscuits by using cookie cutter in your beloved schema. 

Serve them with fine flour sugar or create a icing or even taste them without anything! They will be yummy in every way!

Biscuits with Oat!!!!

Hello my friends!

I adore having a cup of hot decaf coffee or tea and delicious biscuits!!!! If the biscuits have also oat or chocolate...well I might eat them all!!! Remember, oat is also healthy for our little ones!!!

Hello my friends.

I would love to share with you a really delicious recipe for healthy biscuits with oat, easy to make and you are going to enjoy them. Perfect also for our kids.

 Ingredients:
1 ½ tea cup oat
1 tea cup almonds
½ tea cup brown sugar
½ tea cup sesame oil
4 tablespoon milk
1 tea spoon cinnamon
1 tea cup flour with baking powder
1 tea spoon vanilla
A dash of salt
Add according to your taste Raisings – sesame – linseed – goji berry – cranberries 

Υλικά:
1 1/2 φλ. νιφάδες βρώμης
1 φλ. αμύγδαλα
1/2 φλ. καστανή ζάχαρη
1/2 φλ. σησαμέλαιο
4 κουτ.σούπας γάλα
1 κουτ.γλυκού κανέλλα
1 φλ.αλεύρι που φουσκώνει μόνο του
1 κουτ.γλυκού βανίλια
1 πρεζα αλατι
και μετά κατά βούληση...σταφίδες, σουσάμι, λιναρόσπορο, ηλιόσπορο, goji berry, cranberries...




Procedure
Mix all the above liquid ingredients and then add the solid ingredients.
Create small biscuits and bake them in a Preheated oven to 180C for about 20-30min.

Εκτέλεση

Ανακατεύουμε πρώτα τα υγρά και μετά τα στερεά υλικά. Ενώνουμε και πλάθουμε τα μπισκότα. Ψήνουμε σε προθερμασμένο φούρνο, σε αερα στους 180 C για περίπου 20-30 λεπτά.

Cinnamon Biscuits

Hello hello my friends!!!

I have tried this wonderful my mother's recipe and I have to say that the aromas in my home were simple amazing...smelling Christmas!!! Biscuits that you are going to love, with cinnamon and orange!!!






What we will need:

2 tea cups of olive oil
2 tea cups of white sugar
1 and a half tea cup of orange juice
1 teaspoon of cinnamon and clove
1 teaspoon soda
1 baking powder
1- 1 1/2 kgr flour  




Procedure

In a bowl mix sugar and olive oil. Add cinnamon and clove and keep mixing. 

Add the soda into the orange juice and then put it in the mix.

Finally mix the baking powder with the flour and add it in the mixture. Add as match flour as it takes... 1 to 1 and a half kgr. The leaven is ready when it is not stay on the fingers!

Create your biscuits and bake them for almost 40-45min in 180C in oven.

Great aromas...right???? enjoy them with milk, with your coffee... every single time of the day!!!

October's Flash Back!!!!

Hello my friends!!!


Today is the last day of October and we are closer to Christmas! But I have to say that October is one of my favorite months since it is my princess birthday, my name day and of course a month full of Autumn!

There were great posts and times in the blog.... a great recipe and easy to make Cupcake full of Orange and tips how to create your own Aromatic Olive Oil and of course the Coconut Cake from Loula. Cupcakes full of Orange!!!!

Hello my friends!!!

I think I am in love with cupcakes! To be honest I've always enjoyed them but I thought they were really hard to bake. But when almost every week I see a delicious recipe and amazing photos in my friend's Natasa's blog, then it is really hard to not try them. So because of my princess birthday I tried to cook a couple of different recipes and I was really surprised when I realized that it was easy to make them and easier to eat them…. Yeap… none left!

So my first attempt to cook a orange filled cupcake is here!







What will you need:

For the Cupcakes
1/2 cup butter
2/3 cup white sugar
3 eggs
1 dash of salt 
50 ml fresh milk
1/2 teaspoon orange icing 
1 1/2 cups all purpose flour
1 1/2 teaspoons baking powder
80-100gr dried fruits
For the orange icing
180gr cheese cream
140gr fine flour sugar
1 teaspoon orange shaving






The procedure is the usual… in a bowl mix the butter and the sugar and add the eggs one by one until the mix becomes homogeneous.

Add the milk, the orange shavings and keep mixing.

In another small bowl mingle the flour, the baking powder and the salt and add it in the above mixture.

Stop using the mixer, add the dried fruits and keep mixing it for a while with scoop. Your mix is ready. Cook it in a preheat oven in 170 degrees C for about 20min.

When the cupcakes are ready, just mix in a bowl the ingredients for the icing and leave it in the refrigerator for about 15min.  Υou are ready to  décor your small, delicious cakes.

Aromatic Olive Oil!!!!

Hello my friends!

This is an amazing an amazing and really easy recipe to create a tasty aromatic olive oil. Believe me when the oil will be ready you will going to use it really often in your salads, your dishes or even taste it with bread!






So what will you need?  This is something depends on you...I mean what your favorite aroma are. 

The materials I used, are:

- Olive Oil
- Two garlic cloves
- Black pepper
- Red Pepper
- White Pepper
- Origan 

Put all of the above materials in a bottle and leave them for at least 10days. When you will open it again...you will love the aroma!!!!

Instead of Origan, you may use Rosemary or Thyme and the result will be also amazing!!!

You do not need to use too much of it, but a few drops in your salad or your food are just perfect. And if you are just too hungry to cook...then put a few drops in your bread and use also cheese or feta cheese or tomato and eat it as it is or bake it for a few minutes in your oven.


A really delicious and fast to make and of course healthy snack!!!!

This Week's Finds - Cupcakes!!!

I love them... not really...adore them...I want to eat as many as I can... and I love their decorations! Just with a little imagination and miracles happen!!!

Yeap this week for me is full of cupcakes, since I prepare my princess birthday party. I have so many cupcakes recipes to try and decoration too and so many ideas that I am really confused!

Delicious Coconut Cake!!!

Hello my friends!

It is really great especially this time of the year ( I mean with the rain and the cloudy weather) to enjoy a cup of hot coffee with a piece of cake! Imagine now this cake to have Coconut!!! I just love Coconut and especially its aroma.

And it is even better if you can taste this cake from a good friend that cooks really amazing!!! So another guest post from my good friend Loula from Loulalalou

Hello my friends..

I would love to share with you a really easy to make cake with coconut that you are going to love. This cake is my favorite since is my mother's recipe and reminds me my childhood. So let's start...







Ingredients:
1 1/2 cup sugar
2/3 cup butter
3 eggs
1 teaspoon baking powder
2 cups flour with baking powder 
1 cup chopped/powdered coconut

Υλικά
1 1/2 φλ. ζάχαρη
2/3 φλ. βούτυρο/μαργαρίνη
3 αυγά
1/2 φλ. γάλα
1 κουτ.γλυκού baking powder
2 φλ. αλεύρι που φουσκώνει μόνο του
1 φλ. καρύδα




Procedure
Preheat oven to 170 C.
Put all the ingredients in the mixer bowl and mix them together for 4 minutes.
Put the mixture into a buttered and floured cake tin and bake it for about 1 hour.
Let it to cool and sprinkle with sugar powder.


Εκτέλεση
Προθερμαινουμε το φουρνο στους 170C. 
Βαζουμε όλα τα υλίκα σε ένα μπωλ και τα ανακατευουμε για 4 λεπτα.
Τοποθετούμε το μείγμα σε ενα ταψι που το εχουμε βουτυρώσει και αλευρώσει και το ψήνουμα για 1 ωρα. 
Αφηνουμε να κρυώσει και πασπαλίζουμε με αχνη ζαχαρη.

Easy right? and delicious too.... buon appetite!

Chocolate Rocks!!!

An amazing, delicious dessert that can be cooked in a few minutes!




Materials:
   3 bars of dark chocolate
-      Shavings from 1 orange
-      4-5 soup spoon milk
-      Almost 250gr Almonds
-      100-150gr raisins






What to do:

First of all parch the almonds.

Use  a benmarie to melt the chocolate. Add the milk and the shavings from the orange and keep mixing the compound.

When the mixture is ready, add the almonds and the currants and mix it for a couple of minutes again.

Your dessert is ready… just use a spoon and put a spionfull on the large baking pan that is covered with cooking paper.

Leave them for a few hours to chill and you are ready to taste them!!!!





To be honest the classical recipe for the above dessert is just chocolate, almonds and butter. But I wanted to cook it especially for my daughter so instead of butter I added milk and of course raisins and orange. Just use your imagination and create small but sweet bites by adding more nuts and dried fruits or instead of orange just use a few drops of your favorite liqueur.

Lamb with Mustard !!!!

Good Morning my friends!

Have you ever tasted lamb? Here in Greece, lamb is one of our favorite meats to eat especially on Easter. Very clean and very tasteful. But as every meat we have to not over do it with the quantity…. Yeap I know…tough…
 Anyway, last Sunday I cooked lamb with potatoes and it was really delicious. I am not going to point out the quantity of each ingredient, since it is something that you can decide by yourself!








So what are we going to use…
- lamb ( I used almost 750gr for 2 and a half people… my daughter counts as half)
- 5 potatoes
- Mustard
3-4 garlic clove
Olive oil
Salt
Pepper
1 big lemon
- Origan or thyme


Procedure

Clean the lamb and add on salt and pepper. Leave it for fifteen minutes to marinate. Add the mustard on the lamb and leave it again for another fifteen minutes. Your meat is ready to be cooked.

 Clean the potatoes, cut them in pieces and add salt on them. Put them on a large baking pan.

Put the meat above them or in the middle. Chop up the garlic and add it too.

In a glass add the olive oil, the lemon juice and more mustard and mix them. Add the mix to the food. For more aroma in your plate and of course unique taste, we will use  origan or thyme! Finally add a small glass of water.

Cover the baking pan with aluminium paper and put it in the oven in low temperature ( for example on 150oC) for at least one and a half hour.  

Remove the aluminium and slightly increase the temperature. Your food is ready to be served when the potatoes and the meat are soft.

Lemon Yoghurt Dessert

Hello my friends!!!

It was about time to be back In my blog, but to be honest I will not be really active as I was before due to real life issues. I will try to update it with new interested (as always) posts, but not as often as before. Hopefully in a month I will be back “in business”!

So today I would like to share with you a delicious recipe, really fast to make it and really easy. What will you need? Only four materials and 10min of your time. And I promise the result is really yummy and perfect for those who love to eat something refreshing during Summer or people who do not love chocolate or to sweat desserts!




So… what will you need:
-     - 1kgr yoghurt  (I prefer drained yoghurt)
-     - 2 lemons ( juice from 2 lemons and shavings from 1 lemon)
-     - 1 box of biscuits ( I like Digestive)
-     - 1 box of condensed milk




In a small baking pan or a bowl  crumble the biscuits.

In a bowl add the condensed milk and mix it with the lemon juice and the lemon shavings.

Add the crème above your biscuits and put the bowl/pan into the refrigerator for almost 30min.




Your dessert is ready to enjoy it!!!! If you wish it to be more intense, just use more lemon!

Recipe : Vanilla Cupcake with Buttercream Frosting

So here I am again with a sweet full of vanilla aroma recipe from a great lady, a wonderful mama... The pink mama!!!

Hello everyone!

 My name is Anne and I blog over at The Pink Momma. I'm a stay-at-home Mom to a 16 month old little girl. Besides blogging, I enjoy cooking, baking and crafting as well. I also have an Etsy shop called Little Miss Athena which I made handmade hair accessories. I'm such a busy mama! Haha! Anyway, I would like to share a delicious cupcake recipe. One of my favorite, vanilla cupcakes. 






Ingredients for the cupcakes:

1/2 cup (113 grams) unsalted butter, room temperature

2/3 cup (130 grams) granulated white sugar
3 large eggs
1 teaspoon pure vanilla extract
1 1/2 cups (195 grams) all purpose flour
1 1/2 teaspoons baking powder
1/4 teaspoon salt
1/4 cup (60 ml) milk

Ingredients for the buttercream frosting:

2 cups (230 grams) powdered sugar/confectioners sugar, sifted

1/2 cup (113 grams) unsalted butter, room temperature
1 teaspoon pure vanilla extract
2 tablespoons milk


Directions on making cupcakes:

Preheat over to 350 degrees F (177 degrees C). Beat eggs and sugar until fluffy using an electric mixer or a hand mixer. Add eggs one at a time and beat in vanilla extract. In a separate bowl, mix the flour, baking powder and salt. Alternately add the flour mixture and alternately add the milk. Fill the cupcake pan or a muffin cup with the cake batter and bake it for 17-20 minutes. The cupcakes are done when you insert a toothpick at the center and it comes our clean. Let it cool in a cooling rack. Frost it when it's completely cooled.



Directions for buttercream frosting:

Cream the butter until smooth using an electric mixer or a hand mixer. Add the vanilla extract and gradually beat in the sugar. Add the milk. If you want a colored frosting, tint it with your desired color.

This recipe makes about 12 cupcakes.


Voila! You are ready for a cupcake party!
